I love Chinese Food. As an Italian, Italian Food is my favorite, but Chinese Food is a close runner-up. Although I really enjoy going out for Chinese Food, homemade Chinese food far surpasses what you get when you eat out.

I have a bunch of Chinese food recipes, and they are all great. But this one is special. Perhaps I feel this way because of my fondness of hot and sour soup combined with the ease of preparation.

The trick is to find a good hot and sour soup paste. I first bought this at a local grocery store in the Asian food section. The supermarket took it off the shelves, so I had to search for another source ... enter, our neighborhood Asian Food Market.

If you cannot find the hot and sour soup paste, do a search on theinternet for "hot and sour soup paste" and you should be able to buy it online.

This Chinese favorite is so easy and so-o-o good! The directions on the jar of the Hot and Sour paste will probably be different than mine, so be sure to follow these directions.

For a smaller batch, just cut the ingredients in half.

6 SERVINGS

9 cups water

3 tablespoons Hot and Sour Soup Pasta

3/8 white onion, diced

1. Combine the above ingredients in a pot and bring them to a boil. You may have to adjust the amount of paste to your liking ... less for less heat and more for more heat. I think the amount I use is just right, so you might want to try that first.

6 white mushrooms, slices, then cut in half

2. Pourthe mushrooms into the pot with the other ingredients and boil these ingredients for 2 more minutes.

Note: Up to this point, you can make the soup ahead of time. Then all you have to do is add the shrimp or mixed seafood below to the heated soup when you are ready to eat. This is a great idea if you are having company and want to prepare your other dishes and then heat this up when you get close to dinner time.

1-1/8 cup small, cooked shrimp or defrosted mixed sea food (cut the bigger pieces into to smaller even-sized pieces)

3. Add the shrimp just before serving the soup. Add the mixed seafood and cook according to the package Cooking time, which should not be very long.

Pour the soup into servingbowls and garnish each with a little onion for color.

If you like hot and sour soup, I know you will enjoy this one many times over.
