Potatoes: The white potato has gotten a bad rap and really for no reason. A plain baked potato with skin contains almost half an average adult's daily recomMended amount of vitamins C, B1 and B6, over 30% of the RDA for folate, 5 grams of fiber and still comes in at less than 200 calories. Potatoes are naturally fat-free, unless you add butter, sour cream or fry them! They also contain chemical substances that inhibit an enzyme involved in estrogen production and can reduce the risk of breast and prostate cancer. I like to slice them into my salads and omelets and add them finely chopped to burgers and meatloaf.

Turnips: These little guys are part of the Cruciferae family. They are a rich source of calcium, as well as vitamin C, manganese, potassium, copper, B vitamins, antioxidants and fiber. They can help lower the risk of high blood pressure, diabetes, and certain cancers. They also contain lutein, a powerful phytochemical. They are delicious roasted with a drizzle of olive oil and a sprinkle of sea salt and black pepper or they can be boiled and pureed and added to soup or served as a comforting, creamy side dish.

Parsnips: While this root vegetable looks like an albino version of a carrot, it is not only delicious but a great low calorie, fat and cholesterol-free addition to any weight loss diet. Besides being a wonderful fiber source it also contains vitamin C, folate, calcium, and potassium. Parsnips can be shredded, raw, into a salad or slaw, steamed, boiled, braised or roasted with carrots and other root vegetables. Since they have a slightly sweet, nutty flavor you can include pureed parsnips in your mashed potatoes for a delightful change.

Celeriac: This is also called celery root and tastes like a combination of celery and parsley. While it may not be the prettiest vegetable, it is another overlooked low calorie, low fat and cholesterol weight loss star. It's great for lowering blood pressure as it is very high in potassium, as well as vitamins C and B6; vitamin K and phosphorus, very important for healthy bones; manganese and fiber. It's a wonderful detoxifier as well. Enjoy it raw mixed with grated carrots for a delicious twist to traditional carrot salad; use it in place of celery in soups or stews; or oven roast with other winter root vegetables.

Cauliflower: This cruciferous vegetable is part of the Brassica family, which are potent cancer fighters. One cup only contains 25 calories and is low in fat, sodium and cholesterol. It's a great source of fiber, vitamin C, selenium, phosphorous, potassium, manganese, calcium and zinc. Cauliflower contains compounds called glucosinolates and thiocyanates, which help the liver to neutralize toxins. Some studies have also shown these compounds reduce the risk of certain cancers and lower blood pressure. It contains sulforaphane, indole-3 carbinol and phytochemicals, cancer fighting and cancer protective chemicals. Cauliflower is so versatile. Raw cauliflower is a staple of every crudite platter. It is delicious roasted. You can even puree it with some stock and add it to your mashed potatoes or scrambled eggs. One word of caution. Cauliflower is part of the Brassica family, as are broccoli, cabbage and Brussels sprouts. When eaten raw the goitrogenic compounds they contain can depress thyroid function in sensitive people. If you have low thyroid function, don't avoid cauliflower, just be certain to cook it in order to deactivate those compounds.

I love Chinese Food. As an Italian, Italian Food is my favorite, but Chinese Food is a close runner-up. Although I really enjoy going out for Chinese Food, homemade Chinese food far surpasses what you get when you eat out.

I have a bunch of Chinese food recipes, and they are all great. But this one is special. Perhaps I feel this way because of my fondness of hot and sour soup combined with the ease of preparation.

The trick is to find a good hot and sour soup paste. I first bought this at a local grocery store in the Asian food section. The supermarket took it off the shelves, so I had to search for another source ... enter, our neighborhood Asian Food Market.

If you cannot find the hot and sour soup paste, do a search on theinternet for "hot and sour soup paste" and you should be able to buy it online.

This Chinese favorite is so easy and so-o-o good! The directions on the jar of the Hot and Sour paste will probably be different than mine, so be sure to follow these directions.

For a smaller batch, just cut the ingredients in half.

6 SERVINGS

9 cups water

3 tablespoons Hot and Sour Soup Pasta

3/8 white onion, diced

1. Combine the above ingredients in a pot and bring them to a boil. You may have to adjust the amount of paste to your liking ... less for less heat and more for more heat. I think the amount I use is just right, so you might want to try that first.

6 white mushrooms, slices, then cut in half

2. Pourthe mushrooms into the pot with the other ingredients and boil these ingredients for 2 more minutes.

Note: Up to this point, you can make the soup ahead of time. Then all you have to do is add the shrimp or mixed seafood below to the heated soup when you are ready to eat. This is a great idea if you are having company and want to prepare your other dishes and then heat this up when you get close to dinner time.

1-1/8 cup small, cooked shrimp or defrosted mixed sea food (cut the bigger pieces into to smaller even-sized pieces)

Green onion cut for garnish

3. Add the shrimp just before serving the soup. Add the mixed seafood and cook according to the package Cooking time, which should not be very long.

Pour the soup into servingbowls and garnish each with a little onion for color.

If you like hot and sour soup, I know you will enjoy this one many times over.

Ingredients:

2 tbsp vegetable oil
1 roasted chicken (4 up to 5 pounds, cut)
.5 c water 1
2 tsp salt
.5 cup broth or sherry
.5 tsp pepper
1 c fresh or frozen green peas
8 up to 10 white onions (small, halved)
1 c. sliced carrots
1 c diced potatoes
.5 c diced rutabaga or turnip
.5 c frozen or fresh corn
1/3 c flour blended with .5 c cool water (so as to form a type of Pasta)

Procedures:

or Using a heavy pot or Dutch oven, heat to some oil.
or Add some chicken pieces. Make sure all sides become brown.
or Add some sherry, water,pepper and salt.
or Cover and allow simmering for 45 minutes.
or Add some peas, turnip, carrots, onions, corn and potatoes.
or Cover and allow simmering for 35 up to 45 minutes again.
or Stir in some flour as well as water mixture.
or Continue to cook until the stew becomes thick, which will still take 10 minutes.

You can serve this with rice also. Thus, this is good for 6 servings.

2. Chicken and Sausage Stew-You can serve this chicken stew with biscuits or cornbread either. This is best as a family hearty meal.

Ingredients:

1 tbsp butter
1 chicken (4 lbs, cut)
1 tbsp olive oil
1 large yellow or sweet onion (chopped coarsely)
2 celery ribs (sliced)
2 garlic cloves (minced)
Pinch thyme
1/8 tsp black pepper
½tsp Cajun seasoning
6 c chicken broth
3-4 medium potatoes (peeled and cut into cubes)
2 carrots (sliced)
1 c. pearl onions (used canned or frozen, peeled, drained)
8-12 oz. smoked sausage or chicken sausage
2 tbsp butter
Pepper and salt (for taste)
.25 cup flour

Procedures:

or Wash the chicken and cut it up.
or Pat it dry and remove excess fat.
1 tbsp butter or Heat as well as olive oil using a large Dutch oven or stockpot.
Add onion, celery or and chicken. Make sure you make the chicken brown on each side.
or Add thyme, broth, black pepper and Cajun seasoning.
or Bring the mixture to a boil.
or Have the heat reduced to medium then low.
or Cover and allow simmering for 45 minutes.
Remove the chicken pieces or and allowcooling slightly.
or Skim all other visible apart from the actual fat broth.
Add onions or potatoes, and carrots onto the broth.
or Cover and allow simmering again.
or In a small sized Saute pan, heat 2 tbsp of butter about on medium to low heat.
Sauteed smoked sausages or until it is brown.
or Stir in approximately .25 cup of flour until it has mixed well with the fat.
or Add sausage mixture to the still simmering stew.
or Remove the chicken from the actual bones; chip add it onto the stew.
or Bring the chicken stew to simmer again; then, cover and continue to cook until all the vegetables are tender and the stew has thickened.
or Add pepper and salt, for the taste.

This can yield 6 up to 8 servings.
